#recipe >> OVEN-ROASTED DUCK

INGREDIENTS

1 whole duck, thawed
2 tablespoons kosher salt
ground black pepper
1 1/2 tablespoons smoked paprika
small bunch fresh thyme
6 to 8 garlic cloves, chopped
3 shallots, chopped
2 cups chopped carrots

INSTRUCTIONS

Preheat oven to 350F; put together roasting pan with shelf. get rid of thawed duck from packaging and do away with neck from body cavity. Rinse beneath cold water and pat dry with paper towels. If desired, trim off extra fat from tail cease.

In a small bowl, integrate the seasonings: salt, black pepper and paprika. Season in the frame hollow space, then stuff the hollow space with thyme, garlic, shallots and carrots. Season the outside pores and skin generously with the organized seasonings, rubbing the salt into the pores and skin. Use butcher's cord to tie the drumsticks collectively.

Transfer the duck to a roasting pan and location it the other way up first. Roast the duck in preheated oven for 1 hour. Eliminate duck from oven and allow it relaxation for 15 minutes before serving. Garnish a serving platter with rosemary, sage leaves, pomegranate, cranberries and persimmons. Serve with kale pomegranate salad and/or oven-roasted sweet potatoes (video recipes for both aspects dishes on my channel).
