You’ll Need: 

  • 2 racks (about 3-4 lbs each) pork baby back ribs
  • Marinade:
  • 2 cups low-sodium soy sauce
  • 1½ cups sugar
  • 1 cup gin (see NOTES)
  • 2 tsp grated fresh ginger -OR- 1 tsp ground ginger
  • 6 large cloves garlic, crushed
  • ¼ cup honey

How to Make:

  1. dispose of membrane overlaying the bones at the returned aspect of the ribs. cut ribs into 2-rib portions.
  2. mix all marinade substances until honey and the sugar is dissolved—you may heat it inside the microwave to make this less complicated, however do no longer permit it boil.
  3. area ribs in a single layer either in a massive glass or ceramic dish -OR- in zipper freezer luggage. i use the zipper freezer bags as it makes easy up less complicated. I wanted 4 gallon-sized luggage to do these ribs. you may need more or less depending on the dimensions of the rack(s).
  4. Pour marinade over ribs -OR- divide it equally in every bag. region within the fridge for 24 hours, turning once during the marinating time.
  5. Preheat oven to 325 tiers F. Line a massive baking sheet with foil or parchment. Lay ribs, bone facet down at the pan. Reserve 1 cup of the marinade; discard the rest.
  6. Roast ribs for 1½ - 2 hours.
  7. even as the ribs are roasting, pour the marinade into a small saucepan and decrease until it’s slightly syrupy over medium warmth; set apart.
