Recipe : Mango Salsa

   Cool and refreshing salsa that's great served with tortilla chips, veggie dippers, wrapped in tortillas or served on top of grilled chicken, steak or pork chops. Gluten free and vegan.

Ingredients:
three champagne mangos peeled and diced (ataulfo mangos)
1 large cucumber peeled
half of cup finely diced crimson onion or more to flavor
1 jalapeno pepper, seeded, and really finely diced or extra to taste
juice of 1 lime
1 cup chopped cilantro or to taste
How To Make :
Peel and cube mangos and cucumber; upload to a small mixing bowl.
upload finely diced purple onion and seeded, finely diced, jalapeno pepper.
add cilantro and lime juice.
Stir and refrigerate before serving.
Serve with tortilla chips, veggie dippers, or wrapped in tortillas.
you could also serve over grilled chicken, steak or beef chops.
Yield: approximately three-four cups salsa.
